Ingredients
- 3/4 c. chicken bone broth
- 1/2 c. heavy cream
- 1/4 c. whole milk cottage cheese
- 2 tbsp (30 ml). chopped sun-dried tomatoes (from about 4 tomato halves)
- 2 tbsp (30 ml). finely grated Parmesan, plus more for serving
- 1 tsp (5 ml). tomato paste
- Kosher salt
- Freshly ground black pepper
- 4 (6-oz.) boneless, skinless chicken cutlets
- 2 tbsp (30 ml). all-purpose flour
- 1 tsp (5 ml). Italian seasoning
- 2 tbsp (30 ml). extra-virgin olive oil
- 1 tbsp (15 ml). unsalted butter
- 2 garlic cloves, finely chopped
- 1/4 tsp (1 ml). crushed red pepper flakes
- 1/2 c. fresh basil leaves, torn, plus more for serving
Instructions
- In a blender, blend together the broth, cream, cottage cheese, sun-dried tomatoes, Parmesan, and tomato paste until the mixture is smooth; add salt and black pepper to taste.
- Dry the chicken with paper towels; season with salt and black pepper on all sides. Dust with flour and Italian seasoning, pressing gently to make it stick.
- In a large frying pan over medium-high heat, warm the oil. If needed, cook the chicken in batches, flipping halfway through, until both sides are golden, approximately 5 minutes per side. Move to a plate and let sit for 5 minutes.
- In the same pan over medium-low heat, melt the butter. Add the garlic and red pepper flakes, stirring and scraping the browned bits from the pan’s bottom, until it becomes aromatic, roughly 30 seconds.
- Put the chicken and any juices that have collected back into the pan. Pour the sauce over it. Add the basil and cook, spooning the sauce over the chicken, until the sauce thickens slightly, about 5 to 7 minutes; season with salt and black pepper as needed.
- Serve the chicken on plates. Garnish with additional Parmesan and basil.
