Ingredients
- 1 lb (454 g) lean ground beef
- 1/2 cup (120 ml) yellow onion diced
- 1 green bell pepper diced
- 2 cloves garlic minced
- 2-3 medium-sized Russet potatoes peeled and thinly sliced
- 1 can condensed cream of mushroom soup 10.75 oz (305 g)
- 1 cup (240 ml) sour cream
- 1 cup (240 ml) shredded cheddar cheese
- Salt and pepper to taste
- French fried onions for topping
- Sliced green onions optional , for garnish
- Chopped fresh parsley optional , for garnish
Instructions
- Set your oven to 375°F (190°C) and prepare a 9×13-inch baking dish by lightly coating it with cooking spray or butter.
- In a large frying pan, brown the lean ground beef over medium heat, using a spatula to crumble it as it cooks. Cook for approximately 7-10 minutes until fully browned. Add the diced onion, green bell pepper, and minced garlic. Continue to sauté for around 5 minutes until the vegetables are softened and aromatic.
- In a mixing bowl, blend the condensed cream of mushroom soup with sour cream until smooth. Add salt and pepper according to your taste preferences.
- Peel the Russet potatoes and slice them thinly. Layer the slices in two tiers at the base of the prepared baking dish, adding a light sprinkle of salt and pepper to each layer. Distribute the cooked beef and vegetable mixture evenly over the potato layers. Pour the creamy sauce over the meat and vegetables, using a spatula to spread it uniformly.
- Top the casserole with an even layer of shredded cheddar cheese. Bake in the oven for 30-35 minutes, or until the potatoes are tender and the surface is golden brown.
- Take the casserole out of the oven and scatter French fried onions on top. Return it to the oven for an extra 5 minutes until the onions are crispy. Allow it to cool slightly before serving. Optionally, garnish with sliced green onions or chopped fresh parsley.
