Ingredients
- – 1 lb (454g) thin sliced chicken breasts
- – 1/2 cup (120ml) pickle juice
- – 1 tsp (5 ml) brown sugar + black pepper to taste
- – 1/2 tsp (3 ml) each salt & paprika
- – 5 large egg whites
- – 5 English muffins
- – 5 slices of cheddar cheese
Instructions
- Place the chicken into a large mixing bowl or a resealable plastic bag along with the pickle juice. Incorporate the brown sugar and a dash of black pepper. Seal and chill in the refrigerator for a minimum of 30 minutes, up to a full day.
- Once marinated, take the chicken out of the brine and gently blot with a paper towel to remove excess moisture. Evenly coat with salt and paprika.
- Apply a light coating of oil to a grill or grill pan and heat it to medium-high. Lay the chicken onto the grill and cook under a lid for 1-2 minutes per side until fully cooked. Transfer to a plate once done.
- Slice the English muffins in half. Place a piece of grilled chicken on one half.
- Lightly oil a small frying pan and heat over medium. Pour in a single large egg white (or a whole egg if preferred). Season with salt and pepper. Cover and cook for 2-3 minutes until set. Fold the egg white into a square and position it atop the grilled chicken. Repeat with the remaining egg whites.
- Lay a slice of cheddar cheese over the egg white and complete with the other muffin half.
- Wrap each sandwich in foil or plastic wrap and refrigerate for up to five days. Refer to the notes below for reheating instructions.
Notes
- For a spicier flavor, consider adding a dash of cayenne pepper to the chicken marinade.
- Opt for whole wheat English muffins for a healthier option.
- Experiment with different cheeses like pepper jack or Swiss for unique taste combinations.
