Ingredients

  • – 1 lb (454g) thin sliced chicken breasts
  • – 1/2 cup (120ml) pickle juice
  • – 1 tsp (5 ml) brown sugar + black pepper to taste
  • – 1/2 tsp (3 ml) each salt & paprika
  • – 5 large egg whites
  • – 5 English muffins
  • – 5 slices of cheddar cheese


Instructions

  1. Place the chicken into a large mixing bowl or a resealable plastic bag along with the pickle juice. Incorporate the brown sugar and a dash of black pepper. Seal and chill in the refrigerator for a minimum of 30 minutes, up to a full day.
  2. Once marinated, take the chicken out of the brine and gently blot with a paper towel to remove excess moisture. Evenly coat with salt and paprika.
  3. Apply a light coating of oil to a grill or grill pan and heat it to medium-high. Lay the chicken onto the grill and cook under a lid for 1-2 minutes per side until fully cooked. Transfer to a plate once done.
  4. Slice the English muffins in half. Place a piece of grilled chicken on one half.
  5. Lightly oil a small frying pan and heat over medium. Pour in a single large egg white (or a whole egg if preferred). Season with salt and pepper. Cover and cook for 2-3 minutes until set. Fold the egg white into a square and position it atop the grilled chicken. Repeat with the remaining egg whites.
  6. Lay a slice of cheddar cheese over the egg white and complete with the other muffin half.
