Ingredients

  • 6 cups (1420 ml) vegetable oil, for frying
  • 4 russet potatoes (about 800 g), washed and dried
  • fine salt


Instructions

  1. Attach a deep-frying thermometer to the side of a large, heavy-bottomed pot or Dutch oven, then warm 2 inches of oil over medium-high heat until it reaches 320°F.
  2. Prepare a large bowl filled with cold water. While the oil is warming, slice the potatoes. Use a mandoline fitted with a “waffle” or “crinkle” blade to cut each potato into 1/2 inch thick slices, turning the potato 90 degrees with each cut to create the waffle design. Submerge the slices in the water as they are cut.
  3. Rinse the potato slices with cold water to eliminate excess starch, then pat them dry thoroughly with paper towels.
  4. Line two baking sheets with dry paper towels. Fry the potato slices in batches until they start to soften and remain pale, about 5 minutes per batch, then place them on the towel-covered baking sheets.
  5. Increase the oil temperature to 375°F over high heat. In batches, fry the potatoes again until they are crispy and golden-brown, which should take about 2 to 3 minutes.
  6. Transfer them to the towel-lined baking sheets and season with fine salt before serving them hot.
