Ingredients
- 1 lb chicken breast, cooked and shredded
- 4 cups chicken broth
- 1 cup milk
- 1 1/2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/4 cup butter, melted
- 1 tsp dried thyme
- 1/2 cup carrots, diced
- 1/2 cup celery, diced
- 1/2 cup onion, chopped
- Pepper to taste
Instructions
- In a large pot, combine the chicken broth, cooked chicken, carrots, celery, onion, and thyme. Let it simmer over medium heat for several minutes.
- In a bowl, mix together the flour, baking powder, and salt. Stir in the milk and melted butter until a smooth batter forms.
- Drop spoonfuls of the dumpling batter into the simmering broth.
- Cover the pot and allow the dumplings to cook for about 15 minutes without lifting the lid.
- Season with pepper to taste, and serve hot.

For creamier broth, add heavy cream, and feel free to experiment with vegetables like peas or corn.
