Ingredients

  • 1 pound chicken breast
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups potato gnocchi
  • 1 cup fresh spinach
  • Salt and pepper to taste
  • Parmesan cheese for serving


Instructions

  1. Heat olive oil over medium heat in a large pot. Add diced onions and minced garlic, sautéing until the onion turns translucent.
  2. Add the sliced carrots and celery, cooking for another five minutes.
  3. Add the chicken breasts and chicken broth, bring to a gentle simmer, and cook the chicken until fully cooked through, approximately 15 to 20 minutes.
  4. Remove the chicken, shred it with two forks, and return it to the pot.
  5. Stir in heavy cream, gnocchi, and fresh spinach, cooking for another five to seven minutes until the gnocchi is tender and spinach is wilted. Season with salt and pepper to taste.
  6. Serve hot, garnished with grated Parmesan cheese.

Notes

For a thicker soup, you can add more heavy cream or reduce the broth slightly before adding the gnocchi. Always adjust seasoning to taste.
