Ingredients

  • – 4 tablespoons (60 ml) unsalted butter – plus extra for the dish
  • – 1 white or yellow onion – diced
  • – 4 whole carrots – peeled and diced
  • – 2 celery stalks – chopped
  • – salt and pepper – to taste
  • – 1 tablespoon (15 ml) fresh thyme leaves
  • – 2 medium-large chicken breasts – cut into 1-inch pieces
  • – 3 tablespoons (23 g) all-purpose flour
  • – 1 cup (240 ml) chicken broth
  • – 1 ½ cups (360 ml) whole milk
  • – ¾ cup (90 g) frozen peas
  • – 2 sheets refrigerated pie crust – or one homemade pie crust
  • – 1 egg – lightly beaten


Instructions

  1. Set your oven to 425°F. In a large skillet or Dutch oven, heat the butter over medium-high heat until melted.
  2. Add the diced onion, carrots, and celery with a bit of salt, and cook until the onions are soft and starting to turn golden.
  3. Mix in the fresh thyme, then add the chicken pieces, seasoning them generously with salt and pepper. Cook until the chicken starts to brown. Sprinkle the flour over the mixture and cook for another minute.
  4. Gradually add the chicken broth and whole milk, stirring continuously until the mixture thickens slightly, just a bit thinner than your desired pie filling consistency. Stir in the frozen peas and remove from heat. Taste and adjust seasoning with more salt and pepper, if necessary. Let it cool slightly.
  5. Meanwhile, grease a 9-inch pie pan with a little butter and line it with one pie crust.
  6. Pour the cooled filling into the prepared pie pan and brush the edges of the pastry with the beaten egg. Place the second pie crust on top and press down on the edges to seal. Use a sharp knife to trim any excess pastry and crimp the edges.
  7. Brush the top of the pie with the beaten egg and cut a small slit in the center to allow steam to escape. Bake for 30-35 minutes, or until the crust is cooked through and turns golden. You might need to adjust the baking time slightly depending on your oven’s temperature.
  8. Allow the pie to cool for 10-15 minutes before serving.
