Description

Delicious and easy homemade white rotisserie chicken enchiladas with creamy filling and gooey melted cheese.


Ingredients

  • 2 cups cooked rotisserie chicken, shredded
  • 1 cup sour cream
  • 1 cup cream of chicken soup
  • 1 cup shredded cheese (like Monterey Jack or cheddar)
  • 8 large flour tortillas
  • 1 cup green enchilada sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine shredded rotisserie chicken, sour cream, cream of chicken soup, garlic powder, onion powder, salt, and pepper in a mixing bowl.
  3. Spread a small amount of green enchilada sauce on the bottom of a baking dish.
  4. Place a generous amount of the chicken mixture in each tortilla, roll them up, and place them seam side down in the baking dish.
  5. Pour the remaining green enchilada sauce over the rolled tortillas and top with shredded cheese.
  6. Bake in the preheated oven for 25-30 minutes until the cheese is melted and bubbly.
  7. Serve warm and enjoy!

Notes

For a bit of heat, consider adding diced green chilies to the chicken mixture.
