A satisfying and easy weeknight dinner featuring crispy honey BBQ chicken paired with creamy garlic parmesan potatoes.
Ingredients
- Chicken pieces (thighs or breasts)
- 1 cup honey barbecue sauce
- 1 cup breadcrumbs
- 2 tablespoons olive oil
- 4 large potatoes
- 1/2 cup sour cream
- 1/2 cup grated parmesan cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
- Chopped parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix honey barbecue sauce with olive oil.
- Dip each piece of chicken in the sauce, then coat with breadcrumbs.
- Place the chicken on a baking sheet lined with parchment paper and bake for approximately 25-30 minutes until cooked through and crispy.
- While the chicken is baking, peel and chop the potatoes. Boil them until fork-tender, about 15 minutes.
- Drain the potatoes and return them to the pot. Add sour cream, parmesan cheese, minced garlic, salt, and pepper. Mash until creamy.
- Serve the crunchy chicken with the creamy garlic parmesan potatoes. Garnish with chopped parsley if desired.
Notes
To enhance flavor, marinate chicken in honey BBQ sauce for up to an hour before breading. Ensure chicken reaches an internal temperature of 165°F (75°C).
