Description
A comforting one-pot dish combining juicy chicken thighs, fluffy rice, and a sweet and tangy honey BBQ sauce.
Ingredients
- 1 lb boneless, skinless chicken thighs
- 1 cup long-grain rice
- 2 cups chicken broth
- 1/2 cup BBQ sauce
- 1/4 cup honey
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 1 cup mixed vegetables (optional)
- Chopped green onions for garnish
Instructions
- Season the chicken thighs evenly with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Heat a skillet over medium heat and sear the chicken for 3–4 minutes per side until golden brown. Remove the chicken and set aside.
- In a bowl, mix BBQ sauce, honey, and any additional preferred seasonings.
- In the same pan, toast the uncooked rice for 1–2 minutes, stirring constantly to avoid burning.
- Add chicken broth to the pan and pour in half of the BBQ sauce mixture, stirring to combine.
- Return the seared chicken to the pan and pour the remaining sauce over the top.
- Cover the pan and simmer on low heat for 15 minutes.
- If using mixed vegetables, add them to the pan, cover, and cook for an additional 5 minutes or until the rice is tender and the chicken is cooked through.
- Let the dish sit for 5 minutes before serving.
- Garnish with chopped green onions and serve hot.
Notes
Allow the chicken to marinate in the seasoning mix for an hour for enhanced flavor. Serve with extra BBQ sauce on the side if desired.
