Description

A comforting one-pot meal featuring juicy chicken thighs, savory rice, and a sweet honey BBQ sauce.


Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables (optional)
  • Chopped green onions for garnish


Instructions

  1. Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat a skillet over medium heat and sear the chicken for 3–4 minutes on each side until golden brown.
  3. Remove the chicken and set aside.
  4. In the same skillet, toast the uncooked rice for about 1–2 minutes.
  5. Add chicken broth and half of the BBQ sauce; stir well.
  6. Return the chicken to the pan and pour the remaining sauce on top.
  7. Cover and let it simmer on low heat for 15 minutes.
  8. Add mixed vegetables if using and cook for an additional 5 minutes.
  9. Let it sit for five minutes before garnishing with chopped green onions.
