Description

A delightful balance of savory and sweet flavors with a slightly spicy kick, perfect for family dinners.

Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 1½ tbsp chicken seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/4 tsp cayenne pepper (adjust to taste)
  • 2 shakes red pepper flakes
  • 1 tsp black pepper
  • 1 packet Sazon seasoning
  • 2 tbsp olive oil
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp fresh chopped garlic
  • 1½ tbsp low-sodium soy sauce
  • 1 tbsp minced garlic (jarred)
  • ½ cup honey
  • ¼ cup chicken stock
  • Juice of 1 small lime
  • Splash of rice vinegar
  • Splash of white vinegar
  • Cooked white rice (jasmine is preferred)
  • Chopped green onions

Instructions

  1. Season the chicken thighs liberally with chicken seasoning, garlic powder, onion powder, cayenne pepper, red pepper flakes, and black pepper.
  2. Massage the seasonings into the chicken until well-coated.
  3. Heat 2 tbsp olive oil in a large skillet over medium heat.
  4. Add the seasoned chicken thighs to the skillet and brown them on both sides, about 5-7 minutes per side.
  5. Remove the browned chicken and set it aside on a plate.
  6. Combine 2 tbsp low-sodium soy sauce, 2 tbsp fresh chopped garlic, 1½ tbsp low-sodium soy sauce, and 1 tbsp minced garlic in the same skillet.
  7. Stir until the garlic becomes fragrant.
  8. Pour in the honey, chicken stock, lime juice, a splash of rice vinegar, and a splash of white vinegar.
  9. Allow the sauce to bubble and thicken, about 5-10 minutes.
  10. Return the chicken to the skillet, coating it well with the sauce.
  11. Let it cook for a few more minutes to absorb the flavors.
  12. Remove from heat and let rest for a couple of minutes before serving over cooked white rice, garnished with chopped green onions.

Notes

Adjust the spice levels to your preference and consider marinating the chicken overnight for added flavor.
