Ingredients

  • – 1 cooked and seasoned chicken breast (225g)
  • – 2-3 small apples (300-450g)
  • – 8 ounces (225g) spring lettuce mix
  • – 1 tablespoon (15ml) lemon juice
  • – 1/3 cup (40g) roasted pecans
  • – 1/3 cup (40g) dried cranberries
  • – 1/4 cup (25g) crumbled feta cheese
  • – 1 clove garlic
  • – 1 shallot
  • – 1/2 cup (120ml) vegetable oil
  • – 1/4 cup (60ml) balsamic vinegar
  • – 1 1/2 teaspoons (7.5ml) honey
  • – 1 teaspoon (5 ml) Dijon mustard
  • – salt and pepper to taste

Instructions

  1. Cut the cooked and seasoned chicken breast into small, manageable pieces for the salad.
  2. Thinly slice the apples and combine them with lemon juice to prevent browning.
  3. In a large mixing bowl, combine the spring lettuce mix, chopped chicken, apple slices, roasted pecans, dried cranberries, and crumbled feta cheese.
  4. Finely chop the garlic clove and shallot, then place them in a separate bowl.
  5. Add the vegetable oil, balsamic vinegar, honey, Dijon mustard, and a pinch of salt and pepper to the bowl with the garlic and shallot, and whisk everything together until well combined.
  6. Drizzle the prepared dressing over the salad, toss everything thoroughly to ensure even coating, and enjoy your meal!

Notes

  • Enhance the flavor by adding a pinch of cinnamon or nutmeg to the apple slices before mixing them into the salad.
  • For a more savory taste, swap the dried cranberries with chopped dried apricots or raisins.
  • For a creamier dressing, blend in a tablespoon of Greek yogurt or sour cream with the balsamic vinaigrette.
