Ingredients
- 8 bone-in chicken pieces, about 2 lbs (900 g) drumsticks and thighs
- 450 g baby yellow potatoes or 4 large yellow potatoes, cubed
- 4 shallots
- 1 1/2 tsp (8 ml) paprika
- 1 tsp (5 ml) Italian seasoning
- 1/2 tsp (3 ml) salt
- 1/2 tsp (3 ml) black pepper
- 3 tbsp (45 ml) olive oil
- Fresh thyme or rosemary, to top
- 60 ml dijon mustard
- 60 ml water or vegetable/chicken broth
- 2 tbsp (30 ml) honey
- 1/4 tsp (1 ml) paprika
- Salt & pepper
Instructions
- Heat the oven to 375°F.
- Cut the shallots lengthwise and place them in a large ovenproof skillet, braiser, or baking dish along with the baby yellow potatoes. If using larger potatoes, chop them into cubes for even cooking.
- Mix the vegetables with 1 tablespoon of olive oil and a sprinkle of salt.
- Arrange the chicken pieces on the vegetables and pour 2 tablespoons of olive oil over them.
- In a small bowl, mix the paprika, salt, pepper, and Italian seasoning, then evenly distribute the spice blend over the chicken.
- Create the honey dijon sauce by blending the mustard, honey, water, paprika, and salt & pepper in a small bowl. Spread the sauce over the chicken and vegetables. Add some fresh thyme or rosemary around the pan before baking.
- Cover the dish and place it in the oven for 1 hour. Take it out and remove the cover. Baste the chicken with some of the sauce.
- Increase the oven temperature to 400°F and continue baking for an additional 30-35 minutes.
- Add extra thyme or rosemary as a garnish when serving.
Notes
- Marinate chicken in honey Dijon sauce for 30 minutes before baking for enhanced flavor.
- Flip chicken halfway through baking for even cooking.
- Broil dish at the end if chicken skin isn’t crispy enough.
