Ingredients
- 1 to 1 1/2 lb (680 g) s boneless skinless chicken breasts, cut into 1-inch pieces
- 1 Tbsp (15 ml) arrowroot powder, or cornstarch
- 1/2 tsp (3 ml) garlic powder
- 1/4 tsp (1 ml) onion powder
- 1/4 tsp (1 ml) salt
- 1/4 tsp (1 ml) black pepper
- 2 Tbsp (30 ml) olive oil, divided
- 12 oz (340 g) green beans, trimmed
- 1/4 cup (60 ml) green onions, chopped
- Sesame seeds, optional garnish
- 1/4 cup (60 ml) chicken broth
- 3 Tbsp (45 ml) low-sodium soy sauce
- 1/4 cup (60 ml) honey
- 4 cloves garlic, minced
- 1/2 tsp (3 ml) grated ginger, (or 1/4 tsp (1 ml) ground ginger)
- 2 tsp (10 ml) arrowroot powder, or cornstarch
Instructions
- Chop the chicken into 1-inch chunks. Combine 1 tablespoon of arrowroot powder with garlic powder, onion powder, salt, and pepper, then coat the chicken pieces evenly with the mixture.
- Heat a large skillet over medium-high heat and pour in 1 tablespoon of olive oil to cover the surface. Once the oil is hot, place the chicken pieces in the pan in a single layer. Add a pinch of salt and pepper, and cook, stirring occasionally, until the chicken is lightly browned, about 4 to 5 minutes. When done, remove the chicken and place it on a plate.
- Add another tablespoon of olive oil to the same skillet and toss in the green beans, seasoning them with a bit of salt and pepper. Cook the green beans for approximately 6 minutes until they have a slight char and are tender but still crisp.
- While the green beans are cooking, in a small bowl, blend together the chicken broth, soy sauce, honey, garlic, and ginger. In another bowl, mix 2 teaspoons of arrowroot powder with 2 teaspoons of water until smooth, then set it aside.
- When the green beans are ready, return the chicken to the skillet and combine it with the beans. Pour the honey garlic mixture over everything, then add the arrowroot mixture to thicken the sauce, stirring well to coat all the ingredients. Allow the sauce to come to a boil, then reduce the heat and let it simmer until the sauce has thickened and everything is well combined.
- Garnish with chopped green onions and optional sesame seeds. Serve over rice and enjoy!
