Description

Ingredients

  • 12 chicken drumsticks (or 6 chicken legs; about 1.8 kg)
  • 2 Tbsp olive oil (30 ml)
  • 1 Tbsp sesame oil (15 ml)
  • 1/4 cup low sodium soy sauce (60 ml)
  • 2 Tbsp (30 ml) soy sauce
  • 2 Tbsp lemon juice (or lime juice) (30 ml)
  • 5 Tbsp honey (or maple syrup) (75 g)
  • 6 cloves garlic (minced)
  • 1 inch ginger root (peeled and grated, or use 1/4 tsp (1 ml) powdered ginger)
  • 1/2 tsp (3 ml) black pepper (freshly ground)
  • 1 tsp (5 ml) kosher salt (plus more to taste)
  • 1/2 tsp (3 ml) red pepper flakes


Instructions

  1. In a medium bowl, blend all the marinade ingredients together using a fork. Set it aside.
  2. Put the chicken pieces into a Ziploc bag. Pour in the marinade. Remove as much air as possible and seal the bag. Let the chicken marinate overnight, up to 24 hours, or for at least a few hours.
  3. If you plan to cook the drumsticks right away, rub them in the bag with the marinade for around 5 minutes to ensure the flavors penetrate the meat well.
  4. Set your oven to 375 degrees F to preheat.
  5. Move the drumsticks, along with all the marinade, into a baking dish.
  6. Cook uncovered at 375 degrees F for 45-50 minutes, until they reach an internal temperature of 185°F and are browned on top.
  7. Carefully take them out of the oven and serve hot, with the juices from the pan and your preferred side dish such as mashed potatoes or rice.

Notes

  • For a more intense ginger flavor, opt for freshly grated ginger over powdered ginger.
  • Adjust the red pepper flakes to suit your desired level of spiciness.
  • Remember to turn the drumsticks over halfway through cooking for even browning.
