Ingredients
- 12 chicken drumsticks (or 6 chicken legs; about 1.8 kg)
- 2 Tbsp olive oil (30 ml)
- 1 Tbsp sesame oil (15 ml)
- 1/4 cup low sodium soy sauce (60 ml)
- 2 Tbsp (30 ml) soy sauce
- 2 Tbsp lemon juice (or lime juice) (30 ml)
- 5 Tbsp honey (or maple syrup) (75 g)
- 6 cloves garlic (minced)
- 1 inch ginger root (peeled and grated, or use 1/4 tsp (1 ml) powdered ginger)
- 1/2 tsp (3 ml) black pepper (freshly ground)
- 1 tsp (5 ml) kosher salt (plus more to taste)
- 1/2 tsp (3 ml) red pepper flakes
Instructions
- In a medium bowl, blend all the marinade ingredients together using a fork. Set it aside.
- Put the chicken pieces into a Ziploc bag. Pour in the marinade. Remove as much air as possible and seal the bag. Let the chicken marinate overnight, up to 24 hours, or for at least a few hours.
- If you plan to cook the drumsticks right away, rub them in the bag with the marinade for around 5 minutes to ensure the flavors penetrate the meat well.
- Set your oven to 375 degrees F to preheat.
- Move the drumsticks, along with all the marinade, into a baking dish.
- Cook uncovered at 375 degrees F for 45-50 minutes, until they reach an internal temperature of 185°F and are browned on top.
- Carefully take them out of the oven and serve hot, with the juices from the pan and your preferred side dish such as mashed potatoes or rice.
Notes
- For a more intense ginger flavor, opt for freshly grated ginger over powdered ginger.
- Adjust the red pepper flakes to suit your desired level of spiciness.
- Remember to turn the drumsticks over halfway through cooking for even browning.
