Description

Learn how to make delicious Honey Garlic Chicken Fried Rice at home with this easy recipe. Perfect for a quick and tasty meal any day of the week!


Ingredients

  • – 4 cloves Garlic, chopped (20g)
  • – 2 Tablespoon Low-Sodium Soy Sauce (30ml, use Tamari for a gluten-free version)
  • – 1 Tablespoon Honey (15ml)
  • – 2 teaspoon Rice Vinegar (10ml)
  • – 2 teaspoon Toasted Sesame Oil (10ml)
  • – 1 pound Boneless, Skinless Chicken Breast, chopped (450g)
  • – 1/4 teaspoon (1 ml) Salt
  • – 1/4 teaspoon (1 ml) Black Pepper
  • – 2 Tablespoon Cooking Oil, divided (30ml, I like avocado or grapeseed oil; vegetable or canola oil would also work)
  • – 1 large clove Shallot, diced
  • – 1 1/2 cups Frozen Peas and Carrots (225g)
  • – 2 1/2 cups Cooked Rice (375g, see note)
  • – 2 teaspoon Lime Juice (10ml, add more or less, to taste)


Instructions

  1. Mix together the garlic, soy sauce, honey, rice vinegar, and toasted sesame oil in a bowl and keep it aside for later.
  2. Sprinkle salt and black pepper over the chicken to season it.
  3. Heat a wok on medium-high heat.
  4. Pour in 1 tablespoon of cooking oil, and once it starts to shimmer, add the chicken pieces.
  5. Cook the chicken, stirring regularly, until it’s nearly done.
  6. In the final minute of cooking, pour in half of the sauce (around 2 tablespoons) and continue to cook until the chicken is thoroughly coated with the sauce.
  7. Remove the chicken from the wok and place it aside, then return the wok to the stove.
  8. Add 1 tablespoon of cooking oil to the hot wok, followed by the diced shallot and frozen peas and carrots. Cook, stirring occasionally, until the shallot softens and the vegetables are heated through, about 3 to 4 minutes.
  9. Pour the remaining sauce over the vegetable mixture, making sure to scrape up any browned bits from the bottom of the wok, and stir until it begins to simmer.
  10. Add the cooked rice to the wok (breaking up any clumps with your hands if necessary) and stir constantly until the rice absorbs the sauce and everything is well mixed.
  11. Reintroduce the chicken to the rice mixture and mix everything together. Add lime juice on top.
  12. If desired, serve with hot sauce such as Sriracha or Gochujang.

  • Consider using brown rice for added fiber and nutrients.
  • Enhance the dish with toasted sesame seeds or green onions as a garnish.
