Ingredients

  • 1.5 pounds chicken breast (cubed)
  • 2 teaspoons cornstarch
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 1/4 cup chicken broth
  • 1/4 cup honey
  • 1 teaspoon soy sauce or tamari
  • 1/4 teaspoon Old Bay seasoning
  • 1 tablespoon butter
  • 1/2 medium lemon (juiced)
  • 1/4 teaspoon red pepper flakes
  • Sriracha (optional)


Instructions

  1. Add the cubed chicken to a mixing bowl. Sprinkle in cornstarch, salt, and pepper, then stir to coat the chicken evenly.
  2. Heat olive oil over medium-high heat in a large skillet. Add the chicken cubes in a single layer, cooking for 4 minutes without turning. After 4 minutes, flip the chicken and cook for an additional 2-3 minutes.
  3. Add the minced garlic to the skillet and cook for 1 minute until fragrant.
  4. Pour in the chicken broth, using a spatula to scrape up the brown bits at the bottom of the pan.
  5. Stir in the honey, soy sauce, and Old Bay seasoning, then allow the sauce to thicken for a couple of minutes.
  6. Incorporate the butter, fresh lemon juice, and red pepper flakes into the sauce. If desired, add Sriracha for an extra kick. Stir until the butter melts.
  7. Serve your honey garlic chicken bites hot or cold. Enjoy!

Notes

Customize spice levels as desired; Sriracha adds heat. Store leftovers in an airtight container for up to three days.
