Ingredients

  • – 2 cups broccoli florets (250 g)
  • – 1 lb boneless skinless chicken breasts, cut into 1 inch pieces (454 g)
  • – 4 cloves garlic, minced
  • – 1/4 cup low sodium chicken broth or water (60 ml)
  • – 1/4 cup soy sauce (60 ml)
  • – 3 tablespoons honey (45 ml)
  • – 2 teaspoons cornstarch (7 g)
  • – salt and pepper to taste


Instructions

  1. Begin by warming 1 teaspoon of oil in a large skillet over medium heat.
  2. Introduce the broccoli and carrots, allowing them to cook for around 4 minutes, until they soften.
  3. Take the vegetables out of the skillet; set them aside on a plate and cover to keep warm.
  4. Clean the skillet with a paper towel and increase the heat to high.
  5. Pour in the remaining tablespoon of oil.
  6. Sprinkle salt and pepper on the chicken pieces, then lay them in the skillet in one layer. You might need to cook them in batches. Sear for 3-4 minutes per side until they are golden and fully cooked.
  7. Stir in the minced garlic and sauté for 30 seconds.
  8. Return the vegetables to the skillet and let them heat for an additional 2 minutes until warmed through.
  9. In a bowl, combine the chicken broth, honey, and soy sauce by whisking them together.
  10. In a separate small bowl, blend the cornstarch with a tablespoon of cold water.
  11. Drizzle the soy sauce mixture over the chicken and vegetables, cooking for 30 seconds.
  12. Incorporate the cornstarch mixture, bring to a boil, and let it cook for 1 more minute until the sauce begins to thicken.
  13. Serve immediately, with rice if you wish.
