  • 2 cup (480 ml) s broccoli florets
  • 1 lb (454 g) boneless skinless chicken breasts, cut into 1 inch pieces
  • 4 cloves garlic minced
  • 1/4 cup (60 ml) low sodium chicken broth or water
  • 1/4 cup (60 ml) soy sauce
  • 3 tablespoon (45 ml) s honey
  • 2 teaspoon (10 ml) s cornstarch
  • Salt and pepper to taste


Instructions

  1. Begin by warming 1 teaspoon of oil in a large skillet over medium heat.
  2. Place the broccoli and carrots into the skillet, cooking them for about 4 minutes until they become tender.
  3. Take the vegetables out of the skillet, set them on a plate, and cover them to keep warm.
  4. Use a paper towel to clean the skillet, then increase the heat to high.
  5. Add the remaining tablespoon of oil to the skillet.
  6. Sprinkle salt and pepper on the chicken pieces, then lay them in a single layer in the skillet—if necessary, cook in batches. Sear them for 3-4 minutes per side until they are golden and fully cooked.
  7. Stir in the minced garlic and cook for 30 seconds.
  8. Return the vegetables to the skillet, stirring for an additional 2 minutes until they are heated through.
  9. In a bowl, combine the chicken broth, honey, and soy sauce, whisking them together.
  10. Mix the cornstarch with a tablespoon of cold water in a small bowl.
  11. Pour the soy sauce mixture over the chicken and vegetables, cooking for 30 seconds.
  12. Add the cornstarch mixture, bring to a boil, and cook for another minute until the sauce begins to thicken.
