Ingredients

- 1 cup (240 ml) thinly sliced peeled carrots
- 2 cup (480 ml) s broccoli florets
- 1 lb (454 g) boneless skinless chicken breasts, cut into 1 inch pieces
- 4 cloves garlic minced
- 1/4 cup (60 ml) low sodium chicken broth or water
- 1/4 cup (60 ml) soy sauce
- 3 tablespoon (45 ml) s honey
- 2 teaspoon (10 ml) s cornstarch
- Salt and pepper to taste

- Begin by warming 1 teaspoon of oil in a large skillet over medium heat.
- Place the broccoli and carrots into the skillet, cooking them for about 4 minutes until they become tender.
- Take the vegetables out of the skillet, set them on a plate, and cover them to keep warm.
- Use a paper towel to clean the skillet, then increase the heat to high.
- Add the remaining tablespoon of oil to the skillet.
- Sprinkle salt and pepper on the chicken pieces, then lay them in a single layer in the skillet—if necessary, cook in batches. Sear them for 3-4 minutes per side until they are golden and fully cooked.
- Stir in the minced garlic and cook for 30 seconds.
- Return the vegetables to the skillet, stirring for an additional 2 minutes until they are heated through.
- In a bowl, combine the chicken broth, honey, and soy sauce, whisking them together.
- Mix the cornstarch with a tablespoon of cold water in a small bowl.
- Pour the soy sauce mixture over the chicken and vegetables, cooking for 30 seconds.
- Add the cornstarch mixture, bring to a boil, and cook for another minute until the sauce begins to thicken.
