A quick and delicious dinner featuring honey garlic chicken paired with roasted sweet potatoes and green beans.
Ingredients
- 4 boneless, skinless chicken breasts
- 2 large sweet potatoes, peeled and cubed
- 1 pound green beans, trimmed
- 1/4 cup honey
- 1/4 cup soy sauce
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- Salt and black pepper, to taste
Instructions
- Whisk together honey, soy sauce, garlic, olive oil, paprika, thyme, salt, and pepper in a small bowl.
- Marinate the chicken for at least 30 minutes or up to 8 hours in the refrigerator.
- Preheat the oven to 400°F.
- Spread cubed sweet potatoes on a lined baking sheet, drizzle with olive oil, and season with salt and pepper. Toss to coat.
- Roast sweet potatoes for about 15 minutes until they start to soften.
- Remove the baking sheet from the oven and push sweet potatoes to one side. Place marinated chicken on the other side and arrange green beans around them.
- Drizzle the remaining marinade over chicken and vegetables.
- Bake for 20-25 minutes until chicken reaches 165°F and sweet potatoes are tender.
Notes
For added flavor, consider incorporating a splash of sesame oil into the marinade. Use fresh green beans for a vibrant crunch.
