Ingredients

  • 2 medium zucchinis
  • 1 pound (450 g) ground chicken
  • 2 tablespoons (30 ml) olive oil
  • 3 cloves garlic, minced
  • 1/4 cup honey (60 ml)
  • 1/4 cup soy sauce (60 ml)
  • 1 tablespoon rice vinegar (15 ml)
  • 1 teaspoon (5 ml) ginger, minced
  • 1/4 teaspoon (1 ml) red pepper flakes
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 cup green onions, chopped (25 g)
  • 1/4 cup shredded cheddar cheese (25 g)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis in half lengthwise.
  3. Scoop out the flesh of the zucchinis, leaving a 1/4-inch border to form boats.
  4. Chop the scooped-out zucchini flesh and set it aside.
  5. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  6. Add the ground chicken to the skillet and cook until browned, about 5-7 minutes.
  7. Remove the chicken from the skillet and set it aside.
  8. In the same skillet, add the remaining tablespoon of olive oil.
  9. Add minced garlic and ginger, cooking until fragrant, about 1 minute.
  10. Stir in the chopped zucchini flesh and cook for an additional 3 minutes.
  11. Return the cooked chicken to the skillet.
  12. Add honey, soy sauce, rice vinegar, and red pepper flakes to the skillet.
  13. Stir the mixture well and simmer for 5 minutes until slightly thickened.
  14. Season with salt and black pepper to taste.
  15. Place the zucchini boats on a baking sheet.
  16. Fill each zucchini boat with the chicken mixture evenly.
  17. Sprinkle shredded mozzarella cheese over the filled zucchini boats.
  18. Bake in the preheated oven for 20-25 minutes, until the zucchinis are tender.
  19. Remove from the oven and garnish with chopped green onions.
  20. Serve warm.
