Ingredients
- 3/4 cup (180 ml) soy sauce
- 1/2 cup (120 ml) beef broth
- 2 tablespoons (30 ml) Dijon mustard
- 2 tablespoons (30 ml) Worcestershire sauce
- 1 tablespoon (15 ml) hot sauce
- 1 whole chicken, cut into 10 pieces (2 thighs, 2 drumsticks, 2 wings, and 2 breasts, halved)
- 1/4 cup (60 ml) vegetable oil
- Salt
- 3 tablespoons (45 ml) honey
- 2 tablespoons (30 ml) apple cider vinegar
- 6 large cloves garlic, grated
- 2 scallions, thinly sliced
- 1 small lime
Instructions
- In a large bowl, preferably glass, suitable for holding the chicken, mix together the soy sauce, beef broth, mustard, Worcestershire sauce, and hot sauce. Immerse the chicken pieces into this mixture. Rotate the chicken pieces within the marinade to ensure they are thoroughly coated. Cover the chicken with a piece of plastic wrap, pressing down to seal. Place in the refrigerator for a minimum of 6 hours or up to overnight.
- Heat up the grill or a grill pan on high.
- Take the chicken out of the marinade, keeping the marinade aside. Pat the chicken dry to remove any excess liquid. Apply a light layer of vegetable oil to the grill to prevent sticking. Once the grill is lightly smoking, arrange the chicken pieces in a single layer, skin side facing down, on the hottest area of the grill. Close the grill lid. Grill for 4 minutes, then rotate each piece a quarter turn and grill for another 4 minutes to create crosshatch marks.
- Using metal tongs, flip the chicken to the other side; close the grill lid and repeat the grilling process, aiming for a total cooking time of around 16 minutes. Use a meat thermometer to check if the thickest parts of the chicken reach 165 degrees F, steering clear of bones. If not fully cooked, continue grilling with the lid closed for a few more minutes. Once done, take the chicken off the grill. Lightly sprinkle with salt. (If utilizing a grill pan, transfer to a 375 degrees F oven for an additional 10 to 15 minutes to complete the cooking.)
- In a medium-sized skillet, warm the honey over medium heat until it begins to bubble and turn golden brown, approximately 2 to 3 minutes. Remove from heat and stir in the apple cider vinegar. Return to the heat and cook for another 2 minutes. Incorporate the garlic and the reserved marinade, bringing the mixture to a vigorous boil over high heat. Slightly reduce the heat and let it simmer until it thickens into a glaze, around 3 to 5 minutes.
- Lay the chicken pieces in a single layer on a serving dish and drizzle with the sauce. Sprinkle with scallions, a bit of lime zest, and squeeze over some lime juice.
