Ingredients

  • Chicken breast, boneless and skinless – 1 lb (450 g)
  • Olive oil – 2 tablespoon s (30 ml)
  • Lime juice, freshly squeezed – 2 tablespoon s (30 ml)
  • Honey – 3 tablespoon s (45 ml)
  • Garlic, minced – 2 cloves
  • Salt – 1 teaspoon (5 g)
  • Black pepper – 1/2 teaspoon (2.5 g)
  • Avocado, ripe – 1 large
  • Flatbread – 2 large pieces
  • Monterey Jack cheese, shredded – 1 cup (100 g)
  • Cilantro, fresh, chopped – 1/4 cup (15 g)
  • For the Chili Honey Glaze:
  • Honey – 2 tablespoon s (30 ml)
  • Red chili flakes – 1/2 teaspoon (1 g)
  • Lime zest – 1 teaspoon (2 g)


Instructions

  1. Preheat your grill or grill pan to medium-high heat.
  2. In a bowl, mix 2 tablespoons of olive oil, 2 tablespoons lime juice, 3 tablespoons honey, minced garlic, salt, and black pepper.
  3. Add the chicken breasts to the marinade, ensuring they are well coated, and let sit for 15 minutes.
  4. While the chicken marinates, combine 2 tablespoons honey, red chili flakes, and lime zest in a small bowl for the glaze.
  5. Slice the avocado in half, remove the pit, scoop out the flesh, and cut into thin slices.
  6. Grill the chicken for 6-7 minutes on each side or until fully cooked and juices run clear.
  7. Remove the chicken from the grill and let it rest for 5 minutes before slicing it into thin strips.
  8. Lay the flatbreads on a baking sheet.
  9. Evenly distribute the sliced chicken and avocado over the flatbreads.
  10. Sprinkle the shredded Monterey Jack cheese over the chicken and avocado.
  11. Place the baking sheet under a broiler for 2-3 minutes or until the cheese is melted and bubbly.
  12. Remove from the oven and drizzle the chili honey glaze over the flatbreads.
