Ingredients

  • 11/2 lb (2.49 kg) s boneless, skinless chicken breast or thighs, chopped
  • 3 tbsp (45 ml) honey
  • Juice and zest of 2 limes
  • 2 cloves garlic, minced
  • 1 tsp (5 ml) chili powder
  • 1/2 tsp (3 ml) cumin
  • Salt & pepper to taste
  • 24 square wonton wrappers
  • Oil for frying
  • 1 cup (240 ml) black beans, rinsed and drained
  • 1 avocado, diced
  • 1 small tomato, diced
  • 1/4 cup (60 ml) red onion, finely chopped
  • 2 tbsp (30 ml) cilantro, chopped
  • 1/2 ripe avocado
  • 1/4 cup (60 ml) Greek yogurt
  • Juice of 1/2 lime
  • Salt to taste


Instructions

  1. In a medium bowl, combine the honey, lime juice and zest, minced garlic, chili powder, cumin, salt, and pepper, mixing well. Add the chopped chicken pieces and stir until they are thoroughly coated. Allow the chicken to marinate in the refrigerator for a minimum of 20–30 minutes to soak up the vibrant, tangy flavors.
  2. Warm a large skillet over medium heat. Add a little oil if necessary, then introduce the marinated chicken to the pan. Cook for approximately 6–8 minutes, stirring occasionally, until the chicken is fully cooked and slightly caramelized. Remove from heat and keep warm.
  3. In a deep skillet or fryer, bring the oil to a temperature of 350°F (175°C). Using tongs, carefully shape each wonton wrapper into a taco form, holding until they turn crisp (around 30–60 seconds), then transfer them to a plate lined with paper towels to drain. This will create perfectly golden mini taco shells.
  4. In a blender or small food processor, blend the avocado, Greek yogurt, lime juice, and a pinch of salt until smooth. If the mixture is too thick, add a little water or more lime juice until it reaches a pourable consistency.
  5. Stuff each crispy wonton shell with a serving of the honey lime chicken, followed by black beans, diced avocado, tomato, and red onion. Finish with a drizzle of avocado crema and sprinkle with chopped cilantro for a fresh touch.
