Ingredients
- 2 cup (480 ml) s cooked shredded chicken
- 2 tbsp (30 ml) honey
- 2 tbsp (30 ml) fresh lime juice
- 1 tbsp (15 ml) olive oil
- 1 garlic clove, minced
- 1/2 tsp (3 ml) chili powder
- Salt & pepper to taste
- 3 medium sweet potatoes
- 1/2 cup (120 ml) canned corn (drained)
- 1/2 cup (120 ml) black beans (rinsed & drained)
- 1 avocado, diced
- 2 tbsp (30 ml) chopped cilantro
- Ranch or crema, for drizzling
Instructions
- Set your oven to 400°F (200°C) to preheat. Clean the sweet potatoes thoroughly and puncture them a few times with a fork. Place them directly on the oven rack or a baking tray and bake for 45 minutes, or until they are tender and caramelized when pierced with a fork. Allow them to cool slightly.
- Meanwhile, prepare the chicken. In a bowl, combine honey, lime juice, olive oil, minced garlic, chili powder, salt, and pepper by whisking them together. Add the shredded chicken to the bowl, mixing until well-coated. Heat the mixture in a pan over medium heat until it is warmed through and aromatic.
- Rinse the black beans and drain them. Also, drain the corn. Cut the avocado into cubes and chop the cilantro. If using ranch or crema, have it ready for drizzling.
- When the sweet potatoes are cool enough to touch, cut them open lengthwise and gently fluff the insides with a fork to create room for the filling. Evenly distribute the black beans and corn among the sweet potatoes. Spoon the honey lime chicken mixture on top.
- Finish each potato with diced avocado, a sprinkle of chopped cilantro, and a generous drizzle of ranch or crema. Serve warm and savor the flavors!
