A vibrant and flavorful chicken dish featuring tender chicken marinated in a honey-lime sauce, served over a bed of rice with creamy avocado and refreshing vegetables.
Ingredients
- 2 large chicken breasts (about 400g)
- 2 tablespoons honey
- 3 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon soy sauce
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 cups cooked white or brown rice
- 2 ripe avocados, sliced
- 1 cup cherry tomatoes, halved
- 1 cup corn kernels
- 1/4 cup red onion, sliced
- 3 tablespoons fresh cilantro, chopped
- 1/2 cup Greek yogurt or sour cream (optional)
- 1/2 teaspoon chili flakes (optional)
Instructions
- Whisk together honey, lime juice, lime zest, garlic, soy sauce, olive oil, salt, and pepper in a bowl.
- Add the chicken breasts to the marinade and let them soak for about 10-15 minutes.
- Heat a skillet over medium heat. Cook the chicken for 5–7 minutes per side until golden and fully cooked.
- Remove the chicken from the skillet and let it rest. Slice the chicken into strips.
- Prepare serving bowls with warm rice as the base.
- Arrange the sliced chicken over the rice.
- Add avocado slices, halved cherry tomatoes, corn, and red onion to each bowl.
- Top each bowl with chopped cilantro and a dollop of Greek yogurt or sour cream, along with chili flakes, if desired.
- Serve immediately while warm.
Notes
For a more flavorful chicken, marinate for longer than 15 minutes. You can also experiment with different grains like quinoa.
