Description

A vibrant and flavorful chicken dish featuring tender chicken marinated in a honey-lime sauce, served over a bed of rice with creamy avocado and refreshing vegetables.


Ingredients

  • 2 large chicken breasts (about 400g)
  • 2 tablespoons honey
  • 3 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cups cooked white or brown rice
  • 2 ripe avocados, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels
  • 1/4 cup red onion, sliced
  • 3 tablespoons fresh cilantro, chopped
  • 1/2 cup Greek yogurt or sour cream (optional)
  • 1/2 teaspoon chili flakes (optional)


Instructions

  1. Whisk together honey, lime juice, lime zest, garlic, soy sauce, olive oil, salt, and pepper in a bowl.
  2. Add the chicken breasts to the marinade and let them soak for about 10-15 minutes.
  3. Heat a skillet over medium heat. Cook the chicken for 5–7 minutes per side until golden and fully cooked.
  4. Remove the chicken from the skillet and let it rest. Slice the chicken into strips.
  5. Prepare serving bowls with warm rice as the base.
  6. Arrange the sliced chicken over the rice.
  7. Add avocado slices, halved cherry tomatoes, corn, and red onion to each bowl.
  8. Top each bowl with chopped cilantro and a dollop of Greek yogurt or sour cream, along with chili flakes, if desired.
  9. Serve immediately while warm.

Notes

For a more flavorful chicken, marinate for longer than 15 minutes. You can also experiment with different grains like quinoa.
