Ingredients

  • 1 lb (454 g) boneless, skinless chicken breast or thighs, cubed
  • 2 tbsp (30 ml) olive oil
  • 2 tbsp (30 ml) honey
  • 2 tbsp (30 ml) fresh lime juice
  • 2 cloves garlic, minced
  • 1 tsp (5 ml) soy sauce
  • 1/2 tsp (3 ml) chili flakes (optional )
  • Salt & pepper, to taste
  • 1 tbsp (15 ml) chopped fresh cilantro (plus more for garnish)
  • 1 cup (240 ml) shredded red cabbage
  • 1/2 cup (120 ml) shredded carrots
  • 1 tbsp (15 ml) rice vinegar or lime juice
  • 1 tsp (5 ml) honey
  • Pinch of salt
  • 1 head butter lettuce or Bibb lettuce, leaves separated and rinsed
  • Lime wedges, for garnish
  • Extra chopped cilantro


Instructions

  1. In a medium-sized bowl, mix olive oil, honey, lime juice, garlic, soy sauce, chili flakes (if desired), salt, and pepper. Incorporate cubed chicken, ensuring it is well-coated. Cover the bowl and let it sit for a minimum of 20–30 minutes, or up to 4 hours if refrigerated.
  2. In another bowl, blend together shredded red cabbage, carrots, rice vinegar or lime juice, honey, and a pinch of salt. Stir thoroughly and place in the refrigerator while the chicken is marinating. This will help maintain the slaw’s crunchiness and allow it to absorb the tangy flavors.
  3. Warm a large nonstick frying pan over medium heat. Place the marinated chicken along with its marinade into the pan and cook for 5–7 minutes, stirring from time to time, until the chicken is browned and cooked through. Just before taking it off the heat, mix in chopped cilantro.
  4. Arrange the washed lettuce leaves on a platter. Add some slaw to each leaf. Place a generous portion of honey lime chicken on top.
  5. Garnish with additional cilantro and serve with lime wedges for extra zest. Enjoy these immediately while the chicken is hot.
