Ingredients
- 2 tablespoons honey (30 ml)
- 2 tablespoons lime juice (30 ml)
- 1 tablespoon olive oil (15 ml)
- 1 teaspoon chili powder (5 g)
- 1/2 teaspoon ground cumin (2.5 g)
- 1/2 teaspoon garlic powder (2.5 g)
- 1/2 teaspoon onion powder (2.5 g)
- 1/4 teaspoon salt (1.5 g)
- 1/4 teaspoon black pepper (1.5 g)
- 2 boneless, skinless chicken breasts
- 1 tablespoon vegetable oil (15 ml)
- 8 flour tortillas
- 2 cups shredded mozzarella cheese (200 g)
- 1/4 cup chopped fresh cilantro (15 g)
- 1 avocado, sliced
- 1/4 cup plain yogurt (60 ml)
Instructions
- In a bowl, mix honey, lime juice, olive oil, chili powder, cumin, garlic powder, onion powder, salt, and black pepper.
- Place the chicken breasts in a resealable bag or shallow dish.
- Pour the honey-lime marinade over the chicken.
- Seal the bag or cover the dish and refrigerate for at least 30 minutes.
- Preheat a skillet over medium heat and add vegetable oil.
- Remove the chicken from the marinade and discard the marinade.
- Cook the chicken in the skillet for 6-7 minutes on each side, until cooked through.
- Remove the chicken from the skillet and let it rest for 5 minutes.
- Slice the cooked chicken into thin strips.
- Place a tortilla on a clean surface and sprinkle with cheese.
- Add sliced chicken and chopped cilantro on top of the cheese.
- Place a few avocado slices over the chicken and cilantro.
- Top with another layer of cheese and cover with a second tortilla.
- Heat a clean skillet over medium heat.
- Cook the quesadilla for about 2-3 minutes on each side until golden and cheese is melted.
- Repeat with remaining tortillas and filling ingredients.
- Cut each quesadilla into wedges.
- Serve with a dollop of sour cream.
