Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil (30 ml)
  • 1/4 cup honey (60 ml)
  • 1/4 cup lime juice (60 ml)
  • 1 teaspoon (5 ml) lime zest
  • 1 teaspoon (5 ml) garlic powder
  • 1/2 teaspoon (3 ml) salt
  • 1/4 teaspoon (1 ml) black pepper
  • 8 cups (1920 ml) mixed salad greens (about 240 grams)
  • 1 cup (240 ml) cherry tomatoes, halved (150 grams)
  • 1 avocado, diced
  • 1/4 cup (60 ml) red onion, thinly sliced (35 grams)
  • 1/4 cup (60 ml) cilantro leaves (10 grams)


Instructions

  1. Preheat the grill or a grill pan over medium-high heat.
  2. In a mixing bowl, combine olive oil, honey, lime juice, lime zest, garlic powder, salt, and black pepper.
  3. Place chicken breasts in a shallow dish and pour half of the marinade over them.
  4. Let the chicken marinate for at least 15 minutes.
  5. Reserve the remaining marinade for dressing the salad.
  6. Grill the chicken breasts for 6-7 minutes on each side or until fully cooked.
  7. Remove the chicken from the grill and let it rest for 5 minutes.
  8. Slice the grilled chicken into strips.
  9. In a large salad bowl, combine mixed salad greens, cherry tomatoes, avocado, red onion, and cilantro leaves.
  10. Add the sliced chicken to the salad.
  11. Drizzle the reserved marinade over the salad as dressing.
  12. Toss the salad gently to combine all ingredients.
  13. Serve immediately.
