Ingredients
- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil (30 ml)
- 1/4 cup honey (60 ml)
- 1/4 cup lime juice (60 ml)
- 1 teaspoon (5 ml) lime zest
- 1 teaspoon (5 ml) garlic powder
- 1/2 teaspoon (3 ml) salt
- 1/4 teaspoon (1 ml) black pepper
- 8 cups (1920 ml) mixed salad greens (about 240 grams)
- 1 cup (240 ml) cherry tomatoes, halved (150 grams)
- 1 avocado, diced
- 1/4 cup (60 ml) red onion, thinly sliced (35 grams)
- 1/4 cup (60 ml) cilantro leaves (10 grams)
Instructions
- Preheat the grill or a grill pan over medium-high heat.
- In a mixing bowl, combine olive oil, honey, lime juice, lime zest, garlic powder, salt, and black pepper.
- Place chicken breasts in a shallow dish and pour half of the marinade over them.
- Let the chicken marinate for at least 15 minutes.
- Reserve the remaining marinade for dressing the salad.
- Grill the chicken breasts for 6-7 minutes on each side or until fully cooked.
- Remove the chicken from the grill and let it rest for 5 minutes.
- Slice the grilled chicken into strips.
- In a large salad bowl, combine mixed salad greens, cherry tomatoes, avocado, red onion, and cilantro leaves.
- Add the sliced chicken to the salad.
- Drizzle the reserved marinade over the salad as dressing.
- Toss the salad gently to combine all ingredients.
- Serve immediately.
