Description

Ingredients

  • 5 lbs (680 g) chicken tenderloins
  • 1/4 cup (60 ml) lemon juice, approx 2 limes
  • 1/3 cup (80 ml) honey
  • 1/2 cup (120 ml) green chili sauce, mild
  • 1/2 tsp (2.5 ml) minced garlic
  • 1 tsp (5 ml) chili powder
  • 1/4 tsp (1.25 ml) salt
  • 1/8 tsp (0.6 ml) ground black pepper


Instructions

  1. Combine the lemon juice, honey, and spices in a bowl, stirring until they are fully blended.
  2. Lay the chicken at the base of your Instant Pot or slow cooker.
  3. Drizzle the honey-lemon blend and green chili sauce over the chicken.
  4. In the Instant Pot, set to cook for 3 minutes on high pressure, followed by letting it naturally release for 6 minutes (for frozen chicken tenderloins, cook for 6 minutes on high pressure with a 6-minute natural release). In a slow cooker, set it to cook for 3-4 hours on high or 4-6 hours on low.
  5. After cooking, take out the chicken and use the sauté function on the Instant Pot or a stove-top saucepan to thicken the remaining liquid.
  6. Continue simmering the liquid until it clings to the back of a spoon, becoming slightly more viscous than water.
  7. As the liquid reduces, shred the cooked chicken. Once the sauce reaches the desired thickness, mix the chicken back into it, ensuring an even coating.
  8. Enjoy wrapped in tortillas with your choice of rice, cheese, beans, pico de gallo, guacamole, or serve over nachos.
