Description

A vibrant dish featuring grilled chicken breasts marinated in a zesty lime and sweet honey mixture, perfect for any cookout.

Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1/4 cup pure honey
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp cumin powder
  • 1 tsp chili powder (optional)
  • 1/4 cup fresh cilantro, chopped (for garnish)

Instructions

  1. In a bowl, whisk together lime juice, honey, garlic, olive oil, cumin powder, chili powder (if using), salt, and pepper until smooth.
  2. Place chicken breasts in a resealable plastic bag or shallow dish and pour marinade over them. Seal tightly and refrigerate for at least 30 minutes (up to overnight).
  3. Preheat grill to medium-high heat (375°F) or oven to 400°F.
  4. Grill chicken for about 5-7 minutes per side until internal temperature reaches 165°F. For baking, place in a greased baking dish and cook for approximately 20-25 minutes.
  5. Allow chicken to rest for 5 minutes before slicing. Garnish with cilantro and serve with rice or veggies.

Notes

Using a meat thermometer ensures chicken reaches the ideal temperature and avoid guessing. Consider doubling the recipe for meal prep and easy leftovers throughout the week.
