  • 454 g chicken breast or chicken thighs
  • 45 ml honey
  • 45 ml brown mustard (grainy brown mustard)
  • 30 ml vegetable oil
  • 1 garlic clove, finely minced or grated
  • Optional if you like a bit of heat: 1.25 ml cayenne pepper
  • Freshly ground salt and black pepper


Instructions

  1. In a large bowl, combine honey, brown mustard, vegetable oil, garlic, cayenne pepper, and season with salt and pepper.
  2. Add the chicken, ensuring it is well coated in the marinade.
  3. Cover the bowl and refrigerate for 30 minutes to an hour.
  4. Cook the chicken by grilling or baking according to your preference.
  5. For grilling: Heat the grill to 400 degrees Fahrenheit.
  6. Once heated, place the chicken on the grill and close the lid to maintain the temperature.
  7. Grill the chicken for 6-8 minutes on one side.
  8. Afterward, lift the lid and turn the chicken over using tongs, doing this only once to retain moisture and create grill marks.
  9. Continue grilling for another 6-8 minutes.
  10. The cooking duration may vary based on the chicken’s size and cut, so verify the internal temperature with a meat thermometer in the thickest part.
  11. When the temperature reaches 165 degrees Fahrenheit, remove the chicken and place it on a clean plate or board.
  12. Immediately cover with foil to retain the juices, letting it rest for 5-10 minutes before slicing.
  13. For baking: Preheat the oven to 400 degrees Fahrenheit.
  14. Arrange the chicken on a parchment-lined baking sheet.
  15. Bake for 20-30 minutes or until no longer pink, ensuring the internal temperature is 165 degrees Fahrenheit.
