Ingredients

  • – 1 tablespoon (15 ml) oil
  • – 4 boneless, skinless chicken breasts
  • – 1 ½ ounces (42 g) beef bacon diced
  • – 1 small yellow onion chopped
  • – 2 cloves garlic minced
  • – ¾ cup (180 ml) beef broth
  • – 1 tablespoon (15 ml) smooth Dijon mustard
  • – 2 tablespoons (30 ml) whole grain Dijon mustard
  • – salt and Pepper to taste
  • – 2 sprigs fresh rosemary
  • – 2 tablespoons (30 ml) honey or more to taste


Instructions

  1. Warm oil in a large pan over medium-high heat. Place chicken breasts in the pan and cook until each side is well-browned. They don’t need to be fully cooked at this point. Take them out of the pan and set them aside on a plate, covering them.
  2. Return the pan to medium-high heat without removing any leftover bits. Add diced bacon and cook for a short time. Stir in the chopped onion and minced garlic, cooking until they become soft, which should take about a minute.
  3. Pour beef broth into the pan and bring to a boil, making sure to scrape the browned bits from the bottom. Mix in both types of Dijon mustard and season with salt and pepper to your liking.
  4. Place rosemary sprigs and the previously browned chicken back into the pan, covering it with a lid. Allow it to gently simmer for about 6-10 minutes. Turn the chicken over once during this time. When the chicken’s internal temperature reaches 165°F (74°C), take it out and place it on a clean serving dish, covering it.
  5. Increase the heat to bring the sauce to a boil and let it reduce by half. Remove the rosemary sprigs and mix in the honey. Pour the sauce over the chicken before serving.
