Ingredients
- – 1 tablespoon (15 ml) oil
- – 4 boneless, skinless chicken breasts
- – 1 ½ ounces (42 g) beef bacon diced
- – 1 small yellow onion chopped
- – 2 cloves garlic minced
- – ¾ cup (180 ml) beef broth
- – 1 tablespoon (15 ml) smooth Dijon mustard
- – 2 tablespoons (30 ml) whole grain Dijon mustard
- – salt and Pepper to taste
- – 2 sprigs fresh rosemary
- – 2 tablespoons (30 ml) honey or more to taste
Instructions
- Warm oil in a large pan over medium-high heat. Place chicken breasts in the pan and cook until each side is well-browned. They don’t need to be fully cooked at this point. Take them out of the pan and set them aside on a plate, covering them.
- Return the pan to medium-high heat without removing any leftover bits. Add diced bacon and cook for a short time. Stir in the chopped onion and minced garlic, cooking until they become soft, which should take about a minute.
- Pour beef broth into the pan and bring to a boil, making sure to scrape the browned bits from the bottom. Mix in both types of Dijon mustard and season with salt and pepper to your liking.
- Place rosemary sprigs and the previously browned chicken back into the pan, covering it with a lid. Allow it to gently simmer for about 6-10 minutes. Turn the chicken over once during this time. When the chicken’s internal temperature reaches 165°F (74°C), take it out and place it on a clean serving dish, covering it.
- Increase the heat to bring the sauce to a boil and let it reduce by half. Remove the rosemary sprigs and mix in the honey. Pour the sauce over the chicken before serving.
