Ingredients

- – 1 cup bagged coleslaw mix (approximately 100 g)
- – 1 cup lettuce thinly sliced (approximately 70 g)
- – 2 pickles diced
- – 1/4 cup radishes thinly sliced (approximately 30 g)
- – 1/2 cup cherry tomatoes sliced (approximately 75 g)
- – 2 10-inch whole wheat tortillas
- – 1/2 cup shredded beef cheese (approximately 60 g)
- – 2 tablespoons plain Greek yogurt (30 ml)
- – 1 tablespoon mayonnaise (15 ml)
- – 1 teaspoon grainy dijon mustard (5 ml)
- – 2 teaspoons honey (10 ml)
- – 2 teaspoons white vinegar (10 ml)
Instructions
- *If preparing chicken tenders from scratch* Cook your chicken tenders in the air fryer as instructed in the recipe, omitting the buffalo hot sauce post-cooking. Follow the recipe exactly until you take the tenders out of the air fryer. *If using pre-made chicken tenders, you can skip this step.*
- Create your honey mustard sauce by mixing all the sauce components in a small bowl.
- In a large mixing bowl, toss together the coleslaw mix, sliced lettuce, diced pickles, radishes, and cherry tomatoes. Pour about three-quarters of the honey mustard sauce over this mixture, reserving some sauce for later.
- Place half of the coleslaw mix in the center of each tortilla, lay down two chicken strips on top, sprinkle with a quarter cup of cheese, and finish with a drizzle of the reserved honey mustard sauce.
- Secure your tortillas by folding the sides inwards, lifting the bottom flap up, and rolling tightly while applying gentle pressure to ensure a snug wrap.
