Ingredients
- Chicken breast, boneless and skinless – 1 pound (454 g) (450 grams)
- Salt – 1 teaspoon (5 ml) (5 grams)
- Black pepper – 1/2 teaspoon (3 ml) (1 gram)
- Olive oil – 2 tablespoon (30 ml) s (30 milliliters)
- Honey – 1/4 cup (60 ml) (60 milliliters)
- Sriracha sauce – 3 tablespoon (45 ml) s (45 milliliters)
- Garlic, minced – 2 cloves
- Soy sauce – 1 tablespoon (15 ml) (15 milliliters)
- Lime juice – 1 tablespoon (15 ml) (15 milliliters)
- Bread rolls or buns – 4
- Mozzarella cheese, shredded – 1 cup (240 ml) (100 grams)
- Carrot, julienned – 1 medium (about 100 grams)
- Cucumber, julienned – 1 medium (about 150 grams)
- Rice vinegar – 1/4 cup (60 ml) (60 milliliters)
- Sugar – 2 tablespoon (30 ml) s (25 grams)
- Salt – 1/2 teaspoon (3 ml) (3 grams)
- Water – 1/4 cup (60 ml) (60 milliliters)
- Cilantro, chopped – 1/4 cup (60 ml) (15 grams)
Instructions
- Preheat the oven to 375°F (190°C).
- Season the chicken breasts with 1 teaspoon of salt and 1/2 teaspoon of black pepper.
- Heat 2 tablespoons of olive oil in a skillet over medium heat.
- Cook the chicken breasts for 6-7 minutes on each side until fully cooked.
- Remove the chicken from the skillet and let it rest for 5 minutes.
- In a bowl, mix 1/4 cup of honey, 3 tablespoons of sriracha sauce, 2 cloves of minced garlic, 1 tablespoon of soy sauce, and 1 tablespoon of lime juice.
- Slice the cooked chicken into thin strips.
- Return the chicken to the skillet and pour the honey sriracha sauce over it.
- Cook for 2-3 minutes until the chicken is coated and heated through.
- In a separate bowl, mix 1/4 cup of rice vinegar, 2 tablespoons of sugar, 1/2 teaspoon of salt, and 1/4 cup of water.
- Add the julienned carrot and cucumber to the vinegar mixture.
- Let the vegetables pickle for at least 10 minutes.
- Slice the bread rolls or buns in half.
- Place the bottom halves of the rolls on a baking sheet.
- Layer the chicken strips on the bottom halves of the rolls.
- Sprinkle 1 cup of shredded mozzarella cheese evenly over the chicken.
- Bake in the oven for 5-7 minutes until the cheese is melted.
- Remove from the oven and top with pickled veggies.
- Sprinkle with chopped cilantro.
- Cover with the top halves of the rolls and serve immediately.
