Ingredients
- – 6 boneless skinless chicken thighs (900g) ($5.98)
- – 2 cloves garlic (2 cloves) ($0.16)
- – 1 inch fresh ginger (1 inch) ($0.11)
- – 2 Tbsp hot sauce (30 ml) ($0.17)
- – 1 1/2 Tbsp soy sauce (22.5 ml) ($0.15)
- – 1 Tbsp rice vinegar (15 ml) ($0.11)
- – 2 Tbsp honey (30 ml) ($0.24)
- – 2 Tbsp brown sugar (30 g) ($0.03)
- – 1 Tbsp vegetable oil (15 ml) ($0.02)
- – 1/2 cup water (120 ml) ($0.00)
- – 2 Tbsp corn starch (15 g) ($0.12)
- – 1/4 bunch cilantro (or green onions, $0.20)
Instructions
- Chop the garlic finely and grate the ginger into a mixing bowl. Pour in the hot sauce, soy sauce, rice vinegar, honey, brown sugar, vegetable oil, and water. Mix thoroughly. Introduce the corn starch and stir until it dissolves completely.
- Place the chicken thighs into a large resealable bag or shallow container. Pour in half of the sauce mixture, ensuring to mix the sauce well before using it, as the garlic, ginger, and corn starch might settle. Coat the chicken evenly and refrigerate for 30 minutes. Set aside the remaining sauce for later use.
- Set your oven to preheat at 400 degrees. Transfer the marinated chicken along with its sauce into an 8×8 inch casserole dish. Cook in the oven for 30 minutes, ensuring to baste the chicken with its juices halfway through the cooking time.
- As the chicken bakes, pour the reserved portion of the marinade that wasn’t used into a small saucepan. Heat it over medium temperature, stirring until it begins to simmer. Once it simmers, it will thicken into a glaze. Remove from heat and set aside.
- Once the chicken is done baking, apply the thickened glaze over each piece. Garnish with chopped fresh cilantro or green onions before serving.
Notes
- Mix the sauce thoroughly before marinating the chicken for even flavor distribution.
- Baste the chicken with its juices halfway through cooking to maintain moisture and flavor.
- Allow the thickened glaze to cool slightly before applying to prevent it from sliding off.
