Ingredients

  • 2 tbsp (30 ml) baking powder
  • 1 tbsp (15 ml) kosher salt
  • 1 tsp (5 ml) freshly ground black pepper
  • 1 tsp (5 ml) smoked paprika
  • 5 lbs (1134 g) chicken wing sections
  • 1/3 cup (80 ml) honey
  • 1/3 cup (80 ml) hot sauce
  • 1 tbsp (15 ml) seasoned rice vinegar
  • 1/4 tsp (1.25 ml) vegetable oil
  • 1 pinch sesame seeds, or as desired


Instructions

  1. Set your oven to 425°F (220°C) and line a baking tray with foil, placing a wire rack on top.
  2. In a small bowl, combine the baking powder, kosher salt, ground black pepper, and smoked paprika by whisking them together.
  3. Put the chicken wing sections into a large bowl. Sprinkle half of the dry mixture over the wings and mix to coat evenly. Add the rest of the mixture and toss again to ensure full coverage.
  4. Place the coated wings on the wire rack that is on the prepared tray.
  5. Bake the wings for 20 minutes in the heated oven. Flip them over and bake for another 20 minutes. Turn them once more and continue baking until they achieve a golden brown color and a crispy texture, approximately 15 more minutes. Move the wings to a large bowl afterward.
  6. To prepare the glaze, mix honey, hot sauce, rice vinegar, and vegetable oil in a bowl until the mixture is smooth. Pour this glaze over the wings and toss them to ensure they are fully coated.
  7. Move the wings onto a serving dish and finish by sprinkling sesame seeds on top.

  • Adjust the hot sauce amount in the glaze to suit your preferred level of spiciness.
