Ingredients

  • – 3-4 chicken breasts – diced
  • – 1/3 cup (80 ml) corn starch
  • – 1 cup (240 ml) water
  • – 2-3 tablespoons (38 ml) sriracha – (depending on how spicy you want it)
  • – 5 tablespoons (75 ml) soy sauce
  • – 1 tablespoon (15 ml) minced garlic
  • – 1/4 cup (60 g) sugar
  • – 2-3 tablespoons (38 ml) honey – (depending on how sweet you want it)
  • – 2 tablespoons (30 ml) corn starch
  • – 2 tablespoons (30 ml) cold water
  • – optional: crushed red pepper flakes, cooked rice for serving


Instructions

  1. In a medium-sized saucepan, mix together the full cup of water, sriracha, soy sauce, garlic, sugar, and honey, then stir well. Heat the mixture over medium heat until it starts to boil.
  2. In a separate bowl, blend the two tablespoons of corn starch with the two tablespoons of cold water until fully combined. Pour this mixture into the saucepan and stir until the sauce becomes thickened. Lower the heat to a simmer.
  3. Place the diced chicken and the one-third cup of corn starch into a large plastic bag. Close the bag securely and shake it until the chicken is evenly coated. In a large skillet or pan, heat oil over medium heat. Add the chicken pieces and cook them until they are browned and thoroughly cooked.
  4. Pour the thickened sauce over the chicken and stir to ensure it’s evenly covered. Optionally, add crushed red pepper flakes for extra heat, and serve the dish over cooked rice.

Notes

  • For a crispier coating, double dip the corn starch-coated chicken in beaten egg before frying.
