Ingredients
- 4 chicken breasts (680g)
- 1/2 cup pickle juice (120ml)
- 1/2 cup milk (120ml)
- 1/3 cup mayonnaise (80g)
- 3 tablespoons (45 ml) smokey barbecue sauce
- 3 tablespoons (45 ml) yellow mustard
- 4 tablespoons (60 ml) honey
- 1/2 teaspoon distilled white vinegar (2.5ml)
- 1/2 teaspoon lemon juice (2.5ml)
- 1 teaspoon (5 ml) sugar
- 1/4 teaspoon (1 ml) garlic powder
- 1/4 teaspoon (1 ml) onion powder
- 1 1/2 cup all-purpose flour (180g)
- 2 tablespoons (30 ml) powdered sugar
- 2 teaspoons (10 ml) chili powder or more to taste
- 1 1/2 teaspoon (8 ml) salt
- 1 teaspoon (5 ml) garlic powder
- 1-2 teaspoons (8 ml) cayenne pepper
- 1/2 teaspoon (3 ml) onion powder
- 1/2 teaspoon (3 ml) paprika
- 1/2 teaspoon (3 ml) black pepper
- 3/4 cup milk (180ml)
- 1 large egg
- 1 teaspoon (5 ml) salt
- 2 teaspoons (10 ml) chili powder
- 1 teaspoon (5 ml) garlic powder
- 4 sandwich buns
- vegetable oil for frying
- 4 slices cheese
- 16 dill pickle slices
- 4 slices tomato
- 4 slices green leaf lettuce
- vegetable oil for frying
Instructions
- Flatten the chicken breasts if they are too thick, or slice them in half lengthwise, ensuring they are slightly larger than the buns.
- Combine the pickle juice and milk in a large container. Submerge the chicken in this liquid mixture and let it marinate for at least 30 minutes or up to a full day.
- To create the sauce, blend together the mayonnaise, barbecue sauce, yellow mustard, honey, vinegar, lemon juice, sugar, garlic powder, and onion powder until smooth. Put aside.
- Prepare the dry and wet coatings. For the dry mix, combine the flour, powdered sugar, chili powder, salt, garlic powder, cayenne pepper, onion powder, paprika, and black pepper. For the wet mix, blend the milk, egg, salt, chili powder, and garlic powder thoroughly.
- Heat a deep skillet with vegetable oil until it reaches the appropriate temperature for frying.
- As the oil heats up, coat the chicken. Use one hand to dip the chicken into the wet mixture, allowing any extra to drip off, then place it into the dry mix. Use the other hand to coat it thoroughly. Dip back into the wet mixture and then the dry mix again for a second layer. Repeat with the remaining chicken pieces.
- Once the oil is ready, fry the chicken until it turns a deep golden hue on each side. Remove from the oil and immediately place a cheese slice on top.
- Lightly butter the insides of the buns and toast them on a skillet or griddle until golden and crispy on the edges.
- Spread the prepared sauce on both the top and bottom sections of the buns. Layer with pickles, tomatoes, lettuce, then add the fried chicken with cheese on top. Enjoy your meal!
