Description

Quick and flavorful Instant Pot Chicken Burrito Bowls that can be customized with a variety of toppings for an interactive dining experience.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 1 can black beans, rinsed and drained
  • 1 cup corn kernels, frozen or fresh
  • 1 cup salsa
  • 1 cup chicken broth
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste


Instructions

  1. Place the chicken breasts in the Instant Pot.
  2. Add the rice, black beans, corn, salsa, chicken broth, chili powder, cumin, salt, and pepper.
  3. Close the lid and set the valve to sealing.
  4. Cook on manual high pressure for 10 minutes.
  5. Allow for a natural release for 10 minutes, then quick release any remaining pressure.
  6. Shred the chicken with two forks and mix everything together.
  7. Serve in bowls and top with your desired toppings.

Notes

Feel free to customize your bowls with toppings such as diced tomatoes, sliced avocado, shredded cheese, sour cream, and chopped cilantro.
