Description

Quick and flavorful chicken tacos made effortlessly in the Instant Pot, perfect for busy weeknights.


Ingredients

  • 3 (6-7 oz.) boneless skinless chicken breasts
  • 2 tablespoons taco seasoning
  • 1 cup salsa
  • 1/2 cup low sodium chicken broth


Instructions

  1. Season the chicken breasts on both sides with the taco seasoning.
  2. Place the seasoned chicken in the Instant Pot insert and add the salsa and chicken broth.
  3. Seal the pot tightly.
  4. Set the Instant Pot to cook on high pressure for 8 minutes (increase to 12 minutes for frozen chicken).
  5. Once the cooking time completes, carefully move the valve to quick release.
  6. Remove the chicken breasts and shred using two forks or a stand mixer.
  7. Return the shredded chicken to the pot and stir to mix well with the salsa.
  8. Let the mixture sit for a few minutes to soak up the liquids and flavors.
  9. Serve and enjoy in tortillas or on top of salad.
