Description

A quick and flavorful Instant Pot recipe featuring tender chicken with vibrant lemon notes, perfect for weeknight dinners.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1 tbsp honey or maple syrup
  • 1 tsp dried Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp cornstarch
  • 2 tbsp cold water
  • Fresh parsley, chopped, for garnish (optional)


Instructions

  1. Pat the chicken dry with paper towels. Season with salt and pepper.
  2. Set your Instant Pot to the ‘Sauté’ function. Add the olive oil.
  3. Once hot, add the chicken and brown on all sides for 2-3 minutes per side. Remove chicken from the pot and set aside.
  4. Add the chopped onion to the pot and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.
  5. Pour in the chicken broth and scrape the bottom of the pot with a wooden spoon to deglaze.
  6. Stir in the lemon juice, honey or maple syrup, and Italian seasoning.
  7. Return the chicken to the Instant Pot.
  8. Secure the lid and set the vent to ‘Sealing’. Select the ‘Manual’ or ‘Pressure Cook’ function and set the time for 8 minutes for chicken thighs or 6 minutes for chicken breasts.
  9. Once the cooking cycle is complete, let the pressure release naturally for 5 minutes, then do a quick release of any remaining pressure.
  10. Carefully remove the chicken from the pot and set it aside on a plate.
  11. Set the Instant Pot to the ‘Sauté’ function. In a small bowl, whisk together the cornstarch and cold water to create a slurry.
  12. Slowly whisk the cornstarch slurry into the sauce in the Instant Pot, stirring continuously until thickened, about 2-3 minutes.
  13. Return the chicken to the pot and coat it with the thickened sauce.
  14. Serve hot, garnished with fresh parsley if desired.
