Ingredients
- 1 lb ground chicken
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 cup mozzarella cheese, cubed
- 1/2 cup marinara sauce
- 1/4 cup chopped fresh parsley
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, parsley, egg, garlic, Italian seasoning, salt, and pepper. Mix until well combined.
- Form the mixture into a loaf shape and place it in a greased baking dish.
- Stuff the center of the meatloaf with mozzarella cheese, allowing it to melt during baking.
- Cover the top of the meatloaf with marinara sauce and sprinkle additional breadcrumbs for a crunchy topping.
- Bake for 45-55 minutes or until the meatloaf is cooked through and the top is golden brown.
Notes
Allow the meatloaf to rest for 10 minutes after baking before slicing for the juiciest result. Serve with sides like salad or garlic bread.
