Ingredients
- 1 pound ground turkey thigh meat (7% fat, 454g)
- 2 jalapeños (finely chopped)
- ½ cup grated sharp cheddar cheese (extra mature)
- 4 slices streaky bacon
- 1 teaspoon jalapeño hot sauce (optional)
- ½ teaspoon garlic powder
- ¾ teaspoon kosher salt
- Freshly ground black pepper
- 4 brioche burger buns
- 4 slices cheddar cheese
- 4 tablespoons chipotle mayo
- 1 jalapeño (sliced)
- 1 large avocado (smashed)
- 1 cup pink pickled onions
Instructions
- In a mixing bowl, combine ground turkey thigh meat, finely chopped jalapeños, grated cheddar cheese, garlic powder, kosher salt, and freshly ground black pepper. If desired, add jalapeño hot sauce.
- Blend the mixture gently but thoroughly, ensuring everything is evenly distributed.
- Form the mixture into uniform burger patties, aiming for four.
- Cook the bacon in a skillet over medium heat until crispy, then place on a paper towel to absorb excess grease.
- Sear the burger patties in the same skillet over medium heat for about 5-6 minutes on each side, or until they reach a safe internal temperature.
- Just before the burgers are done, add a slice of cheddar cheese atop each patty and cover the skillet to help the cheese melt.
- Toast the brioche buns while the cheese melts.
- Assemble the burgers by spreading chipotle mayo on the bottom bun, layering with bacon, the cheesy patty, slices of jalapeño, smashed avocado, and pink pickled onions, then finish with the top bun.
