Description

A delicious blend of crispy chicken and savory curry sauce, Japanese Katsu Curry is the perfect comfort food that brings warmth and joy to the dinner table.


Ingredients

  • 2 chicken breasts
  • 1 cup panko breadcrumbs
  • 1 cup flour
  • 2 eggs
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 2 cups water
  • 1 package Japanese curry roux
  • Cooked rice for serving


Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Dredge each chicken breast in flour, dip in beaten eggs, then coat with panko breadcrumbs.
  3. Heat vegetable oil in a pan over medium heat.
  4. Fry the chicken breasts until golden brown and cooked through, about 5-7 minutes per side.
  5. In another pot, heat some oil and sauté onions until translucent.
  6. Add carrots and potatoes, then pour in water.
  7. Bring to a boil, then reduce heat and simmer until vegetables are tender.
  8. Add Japanese curry roux and stir until dissolved.
  9. Serve the crispy chicken over a bed of rice, topped with curry sauce.

Notes

Let the chicken rest for a few minutes after frying to retain moisture. Adjust the curry sauce thickness by simmering longer if desired.
