Description

A flavorful jerk chicken bowl served with refreshing pineapple salsa, perfect for a weeknight dinner or a gathering.


Ingredients

  • 1 lb Chicken breasts
  • 2 tbsp Jerk seasoning
  • 1 cup Rice
  • 1 cup Pineapple (diced)
  • 1/2 cup Red onion (diced)
  • 1/4 cup Cilantro (chopped)
  • 1 Lime (juiced)
  • Salt and pepper to taste


Instructions

  1. Marinate chicken breasts with jerk seasoning for at least 30 minutes.
  2. Cook rice according to package instructions.
  3. Grill or pan-fry the marinated chicken until cooked through.
  4. Combine diced pineapple, red onion, cilantro, lime juice, salt, and pepper in a bowl to make the salsa.
  5. Slice the chicken and layer it over the cooked rice, topped with pineapple salsa. Serve warm.

Notes
