Description

A flavorful jerk chicken recipe cooked in the crockpot, featuring tender chicken and sautéed vegetables with a vibrant blend of spices.


Ingredients

  • 2 pounds of chicken (thighs or breasts)
  • 2 tablespoons of jerk seasoning
  • 1 onion, sliced
  • 2 cloves of garlic, minced
  • 1 bell pepper, sliced
  • 1 cup of chicken broth
  • 1 tablespoon of olive oil
  • Salt and pepper to taste


Instructions

  1. Mix the chicken with jerk seasoning, garlic, salt, and pepper in a bowl.
  2. Heat olive oil in a skillet over medium heat and sauté onions and bell peppers until soft.
  3. Transfer the sautéed vegetables to the crockpot.
  4. Place the seasoned chicken on top and pour in the chicken broth.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Serve with rice or your choice of sides.

Notes

For best flavor, marinate the chicken overnight in the seasoning. Adjust spices according to heat preference.
