Ingredients
- 4 boneless skinless chicken breasts (about 1 kg)
- 90 ml extra virgin olive oil (6 tbsp)
- kosher salt, to taste
- freshly ground black pepper, to taste
- 120 ml BBQ sauce (use your favorite)
Instructions
- Set up the grill for direct heat cooking at a high temperature of 450°F, ensuring the grates are well-cleaned.
- Pour extra virgin olive oil over the chicken breasts, spreading it evenly. Season thoroughly with kosher salt and freshly ground black pepper.
- Position the chicken breasts onto the preheated grill. Cover and grill for 5-6 minutes until they naturally lift off the grates. Turn the chicken over and grill for an additional 4-5 minutes. Apply BBQ sauce to the chicken breasts, flip them, and grill for 2 minutes per side. Repeat on the opposite side. Continue cooking until the chicken feels firm and is fully cooked, reaching an internal temperature of 160°F (the temperature will rise to 165°F while resting).
- Move the chicken to a plate, cover with aluminum foil, and allow it to rest for 5 minutes. Add more BBQ sauce when serving if preferred.
- Set the oven to 450°F and lightly coat each chicken breast with oil. Season with kosher salt and black pepper, then place them on a baking sheet lined with aluminum foil.
- Roast in the oven for 15 minutes. Coat the top of the chicken with BBQ sauce, return to the oven, and bake for another 5-8 minutes until the sauce bubbles and begins to char, with an internal temperature of 160°F and clear juices.
- Allow the chicken to rest for a few minutes so the internal temperature rises to 165°F and the juices settle before serving.

- For a smokier flavor, try using smoked BBQ sauce or adding a pinch of smoked paprika to the seasoning.
- To add sweetness, sprinkle brown sugar over the chicken breasts before grilling or roasting.
