Ingredients
- – 2x 9oz (250g) Chicken Breasts, brought close to room temp
- – 1/4 cup (40g) Plain / All Purpose Flour
- – 1/2 cup (120ml) Chicken Stock
- – 6 tbsp (90g / 3.2oz) Unsalted Butter, divided into tbsp chunks (see notes)
- – 2 cloves of Garlic, minced/finely diced
- – 1 tbsp (15 ml) finely diced Fresh Parsley
- – 1 tbsp (15 ml) Olive Oil
- – 1 tsp (5 ml) Garlic Powder
- – 1 tsp (5 ml) Salt, plus more to taste
- – 1/2 tsp (3 ml) Black Pepper, plus more to taste
- – 1 Lemon, divided into 4 wedges (to serve)
Instructions
- In a shallow bowl, mix together the flour with the garlic powder, salt, and black pepper.
- Slice the chicken breasts horizontally to create four pieces of equal size. Coat each piece in the flour mixture, pressing it in to ensure an even layer, then shake off any excess and set them aside.
- In a large skillet on medium-high heat, melt a tablespoon of butter with the olive oil. Once hot, add the chicken pieces and cook until they are golden brown on the outside and fully cooked inside, about 3-5 minutes per side, depending on thickness. Remove and set aside.
- Lower the heat to medium and add the minced garlic to the same skillet. Cook for 1-2 minutes until it starts to brown, then add the chicken stock. Use a wooden spoon to scrape up any bits stuck to the pan. Add the remaining butter and whisk as it melts to combine with the stock, which should become slightly cloudy. Stir in the parsley and adjust the seasoning with salt and black pepper.
- Let the sauce simmer for a few minutes until it starts to thicken, then reduce the heat to low and return the chicken to the pan. Spoon the sauce over the chicken, then serve with extra sauce drizzled on top and a squeeze of lemon juice, if desired.
